When it comes to fairy cakes, I pick cactus themed. Whilst more effort that a buttercream swirl, the cactus piping is still pretty easy to do and satisfying to watch. I chose chocolate cake to represent soil, making them look like potted succulents.

There’s something so satisfying about piping icing and a rosette cake has loads of it. Is the cake half icing? Maybe. For my first attempt at an ombre rosette cake it could have turned out worse, but I think I could make it neater next time.

Salted caramel may be one of the most delicious flavours out there, it’s certainly one of the most popular flavours over the past few years. For some reason add salt to your caramel and it feels more grown-up. I think it must be because the salt balances out taste, curbing the sweetness of the caramel.
